Ingredients

oats300 g
sunflower seeds50 g
almonds, whole and slivered60 g
hazelnuts, chopped50 g
pumpkin seeds50 g
light brown sugar50 g
honey50 g
coconut oil30 g
golden syrup100 g
water2–3 tbsp
salt1 tsp
cinnamon (optional)1 tsp
sultanas (added after baking)100 g

Method

01

Heat the oven to 150–160°C and line a baking tray.

02

Warm the sugar, golden syrup, honey, coconut oil, water and salt in a pan until the sugar has dissolved.

03

Pour this over the oats, nuts and seeds, add the cinnamon if using, and mix well.

04

Spread onto the lined tray and press down firmly.

05

Bake for 35 to 45 minutes, rotating the tray halfway through. Don't stir if you want big clusters.

06

Let it cool completely on the tray, because that's when it crisps up.

07

Break into chunks and fold in the sultanas.

Pearl's note

Don't stir while it bakes and don't touch it while it cools. Pressing it down firmly and leaving it alone is what gives you big clusters. Stored in an airtight jar it keeps for a few weeks. Lovely with yogurt and fruit.
