High Protein Biscuits

These are my breakfast biscuits or savoury scones. They are high protein cottage cheese biscuits with real protein and real layers and an absolute staple in our household.

Ingredients

cottage cheese250 g
milk, plus more for brushing tops70 g
honey20 g
butter, melted30 g
bread flour260 g
baking powder1 tbsp
baking soda¼ tsp
sea salt1 tsp
optional mix-ins: shredded cheddar (110g) + jalapeños (65g), or pesto & parmesan, or cinnamon & raisinsto taste

Method

01

Heat the oven to 220°C and line a baking sheet with parchment.

02

Blend the cottage cheese and milk until creamy, then mix in the honey and melted butter.

03

In a separate bowl, mix all the dry ingredients together. Add to the wet mixture and mix until just combined — the dough will look crumbly and slightly dry, that's normal.

04

Turn the dough out onto a floured surface.

05

If using mix-ins, add about half of them and use floured hands to work them in, bringing the dough together as you go. Repeat until everything is incorporated and the dough holds together more.

06

Flatten the dough into a rough rectangle about 2cm thick — it doesn't need to be neat. Fold one end into the centre, then fold the other end over it, like folding a letter.

07

Flatten into a narrower rectangle, again about 2cm thick, and repeat the fold. This is what builds the layers.

08

Cut into 8 biscuits and arrange on the baking sheet with the edges touching. Brush the tops with milk and bake for 20 to 22 minutes, until golden on top and set in the centre. Let cool for 10 minutes before eating.

Pearl's note

I always make a double batch and freeze half, they reheat well straight from frozen. Per biscuit, plain: ~184 kcal, 7.6g protein, 27.2g carbs, 4.9g fat. With cheddar and jalapeños: ~243 kcal, 11.2g protein, 27.9g carbs, 9.6g fat.
