A wholesome take on a Twix bar. Almond shortbread, a caramel that's just almond butter and maple syrup, and a dark chocolate shell finished with flaky salt.
Heat the oven to 180°C.
Mix the almond flour, melted coconut oil and honey, then press into a lined loaf pan.
Bake for 12 minutes, until lightly golden.
Mix the almond butter, coconut oil, vanilla and maple syrup for the caramel, then spread it over the still-warm base.
Freeze for 30 minutes, until firm.
Melt the chocolate with the coconut oil and pour it over the set caramel, then scatter with flaky sea salt.
Freeze for another hour, until solid, then slice into bars.
Keep these in the freezer or fridge rather than out on the counter. The caramel layer is soft enough at room temperature that the bars will slide apart otherwise.
